Elegant and subtil wine, the fine bubbles are produced during the secondary fermentation according to the ancestral method. The wine is aged for 14 months minimum in the cool shade of our cellar, during this time it will develop a very particular flavour.
The wine develops a beautiful complexity of aromas : open nose of berry fruits.

Terroir Vines aged from 18 to 30 years old, growing on a Jurassique terroir. Grass cover between the rows.
Vinification
The grapes were harvested at good ripeness in order to get the right balance between sugar and acidity. Alcoholic fermentation is done at low température (16°C to 17°C) and at slow speed in order to preserve the aromas. We use the «ancestrale» method to make our sparkling wines. The base wine is harvested between 12.5% alc and 13.00% alc. Then it is made in a semi-dry style to keep about 20 grammes of residual sugar, which we will need to start the secondary alcoholic fermentation in bottles.

Serving suggestion
To serve chilled from 8 to 10°C at any time, for aperitif, with a meal or by itself.
